“During the times of staying home and social distancing at the beginning of the pandemic, my husband Scott Parsons and I would take walks through Saco. We would sometimes joke with one another about how cool it would be to own a bar one day, not knowing that almost a year later, that would become a reality for us.
Scott has almost 20 years of experience in the bar and hospitality industry, and I have over 10 years experience working in hospitality. We really believe in relationship building, and opening a business just felt like a natural fit to our skill sets.
We purchased Unwind Cocktail lounge toward the end of July 2021 with plans to open soon after. At the time, I was pregnant with my daughter Alice and ended up going into labor a month early, so it took a little bit of extra time to get things up and running. She has been with us through the whole journey though, which is a really special feeling.
We rebranded the business by changing the old logo, and worked with a consultant to create signature cocktails and get our menu launched. We wanted beautiful cocktails as a menu item because it feels like a unique thing to have here in Saco.
We offer a little bit of something for everyone. From cocktails to mocktails, we are really proud to support local distilleries and carry local beverages. We want everyone to feel comfortable coming here.
We can comfortably seat 35 people, and have hosted all sorts of celebrations for people since we opened. From birthdays, to anniversaries, to baby showers, we love being able to foster those special moments and gatherings.
We recently had a group gather here for a celebration of life. It’s such an honor to be considered a place where people feel comfortable building our business into the fabric of their lives and memories.
